The Surströmming is stored refrigerated. In order not to interrupt the cold chain and slow down the fermentation process, the can must be stored refrigerated at +4 to +6 degrees until consumption. Due to the ongoing fermentation process, the fish continues to ferment - therefore the can can can may occur. RÖDA ULVEN: Surströmming is mainly known in Sweden and Scandinavian countries. It has a reputation for being one of the smelliest foods in the world, causing many people outside these regions to hesitate to try it. In Sweden, Surströmming is traditionally served with potatoes, onions, sour cream and crispbread. It is important to open Surströmming in well-ventilated areas to soften the intense smell, and some people prefer to enjoy it outdoors. For locals, eating Surströmming is a cultural tradition, but for non-initiates it can be a getting used to Surströmming is a Swedish delicacy made from Baltic Sea herrings.
