Exceptional pepper speciality with only light but intense sharpness, lemony and spiky Green berries with a fine, lemony fragrance. Shortly before the actual full maturity, our green pepper is harvested. It is even more lemony than its fully ripe reddish-brown variant. Szechuan pepper harmonises particularly well with hot peppers or chilli, but can also be used as a mixture with black pepper and e.g. pink peppercorns can be used in the mill. Szechuan pepper is very common in Asian cuisine and is a component of Chinese five-spice powder (besides fennel seeds, star anise, cloves and cinnamon). As the captivating smell in combination with oxygen disappears very quickly, you should use the pepper in a mill and grind fresh while preparing the food. If you roast the whole capsules briefly dry in the pan before mortar or grinding, a particularly intense aroma with completely new taste nuances is created. The special tingling on the tongue is referred to in Chinese as its own taste 'ma'.
