JO-MEHL: The carob tree belongs to that of the legumes family and is native to the Mediterranean and Middle East. It bears brown, hard pods as fruit, inside which lie the small brown carob seeds. These are released from the pod, dried finely ground. Locust bean gum, also LBG or Locust Bean Gum, has a powdery consistency. Use: what do I use it for? The finely ground powder dissolves very well and stir in sauces, soups, pasta and dairy products to thicken. It loosens dough, is considered a stabiliser and is an important ingredient in the production of ice cream. Even with small amounts of yo flour, liquids become very stable gel-like substances. Kitchen aid: what else can it do? The flour also enhances the gelling effect of other vegetable thickeners and is therefore often used in combination with guar gum or xanthan. 100% natural product: Carob seed flour is a purely vegetable food additive. It is harvested and processed without the use of genetic engineering. Sustainability: the approved filling according to the strictest quality requirements at NUR BIO is subject to constant control by food monitoring.
