The subtropical climate, full shade and the absence of the use of chemical pesticides are the basis for this exceptionally high-quality matcha. The tee is made by Shimodozono Co. Ltd. based in Kagoshima City on their organic farm. Shimodozono tea was the first Japanese green tea certified according to EU organic guidelines. Matcha preparation There are two variants. Usucha, the thin matcha is mixed with 2-3 spatula powder and 5-6 ml approx. 80°C warm water. With the chasen, stir smooth so that as possible all lumps are removed. Then again approx. Add 100 ml of 75°C warm water and beat the matcha with a W-shaped movement in the matcha bowl until a beautiful foam forms. The thick Koicha is prepared with more green tea powder and less water.
